Soba Noodle Stir Fry
Prep Time: 10 min
Cook Time: 5 min
Total Time: 15 min
1/3 package of organic Soba noodles
1 stalk off of a bok choy head
1 handful of sugar snap peas
4 small to medium portabella mushrooms sliced
1 Green onion chopped
1 tbs Seasame oil
2 tbs Soy sauce
1 tbs Lemon juice
Fresh ginger, grated(to taste)
Directions:
Bring a pot of water to boil for noodles. While water is boiling chop bok choy, mushrooms, and green onion. In a pan over med-high heat add seasame oil, soy sauce, lemon juice, and ginger. Lightly saute veggies while noodles cook. Follow directions on Soba noodle package. Drain noodles and mix them in the pan with veggies. May add more seasame oil and/or soy sauce to taste. Serve!

On November 8, 2011 we were surprised with a little baby boy, Jace Nicholas Navarro. After a a three week stay in the NICU, heart surgery and a three week stay at Stanford, we brought our baby boy home. Sadly, he was diagnosed with a rare chromosomal abnormality, MECP2 Duplication Syndrome. He touched so many people in his short, sweet little life. Our little man Jace passed away on February 9, 2012. Now we are working on getting our life back together for the rest of our little family. And now, after a few long and crazy months I am back to discovering delightful veggie dishes!
