Cream of Vegan Broccoli Soup



Prep time: 10 min
Cook time: 20-25 min
Total time: 30-35 min

1 onion chopped
32 oz vegetable broth
3 medium heads of broccoli cut
5 small red potatoes cubed
2c. almond milk
3 tbs minced garlic
2 tbs olive oil
onion salt
no-salt seasoning
pepper
4 cubes of vegetable bullion with 2c. water or salt to taste

*more liquid may be needed while cooking broccoli

In a medium stock pot saute onion and garlic in olive oil until soft. Add vegetable broth, broccoli, and potatoes, boil until soft. Use an immersion blender to puree or portion out and blend in a food processor. Some chunks are good, it all depends on how you like your soup. Mix in almond milk and simmer 5-10 min. Serve!
